Lady Hunt’s Salsa

There are many reasons to befriend Lady Hunt, not least her way with vegetables. She always manages to whip up a delectable snack in an instant, even when insisting the cupboards are empty.

Our favourite time to visit The Grotto is when the Pimms is flowing and its avocado season. We can always be sure of a heaving bowl of her famous salsa which I’m sure she won’t mind me sharing the recipe with you.

Most important is to choose the perfect avocado. I always select one that is firm with one or two days ripening left. For some reason I like to wait and watch until my fruit softens and then chop it into chunks. I don’t like using store ripened fruit, by the time I get it home its brown, ugly and bruised.

You will also need a few other summery ingredients that should have pride of place in any Lady’s kitchen:

½ red onion diced

Juice of one lime, minus a segment for your drink

1 or two ripe tomatoes diced – depending on size and your preference (I use two roma)

1 small bunch of coriander roughly chopped

1 pinch sea salt flakes

Carefully mix the ingredients together, trying not to squash the avocado into oblivion you want it to be gorgeously chunked.

Laden corn chips, lettuce cups, tacos, chicken, anything really with a generous spoonful of salsa. It is one of our favourite afternoon snacks at Rainbow Lane, almost as welcome as a visit from Lady Hunt herself!
